Ingredients
(Base)
2 egg yolks
2 tbsp cold water
220g plain flour
110g unsalted butter
20g sugar powder
pinch of salt
1. Beat the egg yolks and cold water until well combine and keep aside.
2. Combine flour, sugar, salt in a bowl and mix well.
3. Dice the butter and add into the bowl with the dry ingredients.
4. Add the egg-water mixture slowly bring the dough together, don't knead!!!
5. Wrap the dough in cling wrap and place in fridge for 15mins.
6. Preheat the oven at 180'C.
7. Remove dough and roll out on floured surface. Take rolled out dough and place in tart pan. Start pressing the dough from the middle to the sides. Lightly press the pastry into the sides and remove the excess.
Prick the bottom of the dough with fork.
(Custard)
300ml of milk
200ml of Whipping Cream
2 Eggs
4 tbsp Caster Sugar
2 tbsp Plain Flour
Peel of 1 Lemon
1. Heat milk and whipping cream together with lemon peel on medium low heat.
2. In a separate bowl, whisk eggs, flour and sugar together.
3. When milk mixture starts steaming(bubbles form on the sides), remove the lemon peel.
4. Lower the flame and pour in the egg mixture and stir the mixture continuously till the custard thickens.
5. Let the custard to cool down then pour custard on top of the pastry dough.
(Topping)
3 Granny Smith Apples, thinly sliced
1 tbsp sugar
1/2 tsp ground cinnamon
1. In a bowl, combine thinly sliced apples, sugar and ground cinnamon and mix well.
2. Arrange the apple slices on top of the custard layer.
3. Final step......place the tart in the oven for 40-50mins, or until the crust is cooked well and the apples are golden brown!
Remove from oven and leave to cool down a little.
Serve and enjoy!
